Though plain sourdough loaves are my go-to, sometimes I just get an urge to make some random other bread. Tortillas and bagels are pretty regular, but recently I started making one that was super daunting to me (but actually SO easy!)- pasta noodles.
I first made them purely by hand, which was doable but more time consuming than ideal for me. But they were SO delicious, and of course more nutritious and affordable than store bought, that we decided to get a Kitchenaid pasta tool (I LOVE my Kitchenaid mixer!). Now it’s super easy and quick!

Ingredients:
3 1/2 cups of flour
1 teaspoon salt
3 eggs
1/2 cup (or more) water
Instructions:
-Combine flour, salt and eggs in mixer bowl and mix with paddle to combine.
-With dough hook on, pour in water and mix on a medium speed. As dough comes together, add more water as necessary to create a smooth (not sticky) dough.
-Split dough into four parts and flatten each into a rectangle(ish). Flour each piece and your work area.
-Attach pasta roller attachment, set to #1.
-On low speed, run one section at a time into the roller. (Do this simply by hanging the dough above it and letting it be pulled through by the roller). After you roll a section, fold it in half long ways and run it through again, repeating 3 or 4 times. it will get stronger each time.

-Flour each section well.
-Set pasta roller to #2 and roll each dough rectangle through 1-2 times. Set roller to #3 and roll through again. Flour the sections again.

-Now the funnest part! Attach the pasta cutting attachment (we like the spaghetti one), and run one flattened dough part through. All the kids exclaimed in amazement when we did this for the first time and said how satisfying it was haha!
-As the dough comes out pasta, lay it on a flat counter. Let it dry there if not using right away.

To cook:
-Just plop your pasta noodles into salted boiling water and cook for 3-4 minutes (much quicker cooking than store bought)!

-Drain water, drizzle with olive oil, and serve with whatever sauce or toppings you like! We even love them plain with just olive oil and some Italian seasoning!
